Beef rissoles

Serves 4 (10–12 rissoles) Prep 15 min Cook 15 min Total 30 min

  1. Grate onion into a bowl, mix with panko so it soaks up the juices.
  2. Grate zucchini and carrot into the bowl. Add mince, egg, garlic, herbs, salt, pepper and Worcestershire. Mix well.
  3. Shape ¼-cup portions into patties about 1.7 cm thick. Press a slight dent in the centre of each.
  4. Fry in oil over medium heat, in batches, 4 minutes first side until dark golden (press only lightly).
  5. Flip and cook 3–4 minutes more. Rest on a plate. Serve with tomato sauce, mash and veg.

Tip: The dent stops them puffing into balls so you are not tempted to squash the juices out. Grated onion and zucchini keep them juicy. Bake option: 200°C, 20 minutes, flip, 5 minutes more.
